Zero-Waste Recipes: Cook With What You Have

What Is Zero-Waste Cooking?

Zero-waste cooking means using every ingredient to its fullest β€” stems, peels, overripe fruit, stale bread, and vegetables that are about to wilt. These recipes are specifically designed to rescue near-expiring ingredients and turn them into delicious meals. Each recipe includes the key "rescue ingredient" it's designed for.

Each recipe below is designed around a common ingredient that's about to expire. Click through for full ingredients, step-by-step instructions, and nutrition data.

5 Principles of Zero-Waste Cooking

  1. Shop your fridge first. Before buying anything new, check what's already in your fridge and plan meals around those ingredients. Receipt 2 meal's AI meal planner does this automatically β€” it prioritizes ingredients that are expiring soonest.
  2. Use the whole vegetable. Carrot tops make pesto. Broccoli stems are delicious stir-fried. Potato skins become crispy snacks. Herb stems flavor stocks. Stop peeling β€” most nutrients are in or near the skin.
  3. Freeze at peak freshness. Don't wait until food is about to spoil to freeze it. Freeze at peak quality and you'll have better-tasting food when you thaw it.
  4. Batch-cook and repurpose. Cook a big batch of rice or roasted vegetables, then use them in different meals throughout the week. Today's roasted vegetables become tomorrow's soup or salad topping.
  5. Embrace "ugly" produce. Wrinkled tomatoes make the best sauce. Overripe bananas make the sweetest bread. Soft apples make great applesauce. Appearance doesn't determine flavor.
